Raw Chocolate Chip Cookies & Fruit Pie


As many have been requesting some new recipe idea, I will share what has been going on in our kitchen lately :)


First off, what I made today....


RAW CHOCOLATE CHIP COOKIES!!


Covered in raw shredded coconut :)

Raw Cookie Dough... mmmm



Half of these are covered in Coconut Shreds and the other half in Shaklee Soy Protein powder with raw coconut.

These are absolutely delicious!
They take about 10-20 minutes to finish (if they make it all the way to the finish).

The Dough:
4 cups of raw organic oats
1 cup of raw walnuts
1/2c raw honey
1/2 cup organic extra virgin coconut oil
A little bit of Vanilla

Place the oats and nuts in the food processor first. Then add the remaining ingrediants. Place in the refrigerator while you make the chocolate chips.

Chips:
2 tablespoons of coconut oil
1/4 cup carob powder
1/4 cup cocoa powder
4 tablespoons of pure maple syrup (or honey, or agave necter)
Little bit of vanilla

Alright, so you mix all the ingredients together, spread out in a thin sheet on a cookie sheet that is lined with foil, or wax paper or something and place in the freezer. When frozen solid, take a pizza cutter and slice away into little square shapes!

Then simply fold the chocolate chips into the dough, then roll the dough into little balls. You can roll these in coconut or whatever you wish! (LEAVE ME YOUR IDEAS IN THE COMMENT SECTION) :)

RAW FRUIT PIE


Strawberry Pie!

Crust:
1 cup almonds
1 cup walnuts
3/4 cup dates

Process away! Line a pie pan.


Filling:
4 cups of fruit + 1 cup fruit (strawberries, cherries, blueberries, blackberries, raspberries)
2 Avocados (or bananas if you like that taste)
2 Tablespoons of honey

Process (or blend) all the above except the extra cup of fruit. 


When smooth, pour into pie crust and then mix in the extra cup of fruit. You can place in the fridge (for 3 hours or overnight) or I place in the freezer if we aren't going to eat it all in one night and just take out one piece at a time.


So that's what has been going on in our kitchen. 
I LOVE raw desserts and snacks. 
You can eat great luxurious sweets that are quick to make and living food for your body!
But I like my meals cooked. 
Especially beans and rice!
